Tourism Accommodation Australia with Tourism Training Australia (TTA) in co-operation with Cornell University School of Hotel Administration hosted the Senior Executive Development and Food & Beverage Executive Development Programs in Australia in 2014.
Food & Beverage Executive Development Program – May 26 to 27
This practical program is designed to increase the bottom line trading with emphasis on increasing turnover through sales & marketing activities, controlling the cost of sales on food and beverage by control strategies, understanding employment expenses and controlling operating expenses.
Topics include spotting trends and innovations, guest service management, forecasting, budgeting & controls, operations based marketing manifesto, menu pricing strategies, service staff training and motivation strategies, developing a strong “bench” of managers and developing great managers to great leaders.
Program fee: $3000 +gst inclusive program note, teaching, conference fees, stationary, graduation event and Cornell Certificate
Senior Executive Development Program – May 28 to 29
This Senior Executive Development program is designed for General Managers and/or Directors. This program will focus on the application of financial management concepts, analysis of hospitality operations, examination and explanation of managerial accounting tools, communicating and interpreting financial data from a General Manager’s perspective and defining common terminology used by owners, operators and others. Course format includes lectures, case studies and problem sets.
Topics include understanding the Uniform System of Accounts for Hotels and Restaurants, revenue and expense tracking, ratio and comparative analysis of operation, understanding cost/volume/profit (CVP) analysis, pricing strategies and decisions, operational and capital expenditure budgeting, developing cost estimates, standards and transfer-pricing mechanisms.
